Default Sausage and Apple Casserole

I thought I'd post the recipe for this, we had it last night and it tasted really really good. It does take some time to prepare and cook, but is well worth it.

Ingredients
4 Pork Sausages
1 Onion
1 Leek
1 Carrot
1 Large Potato
1 Large Apple
300ml Apple Juice/Dry Cider
1 Tbsp Flour

Method
Put the sausages into the oven, and cook until done. Heat some oil in a saucepan and add the chopped vegetables, frying for 5 minutes. Add in the flour and continue cooking for a further minute. Pour over the apple juice and season with salt/pepper to taste. Take a large casserole dish and place in the sausages and chopped apple. Pour over the contents of the pan, and mix well. Cover and cook in the oven (180C) for 50 minutes to 1 hour. Serves 2.

Sounds wonderful. For some reason, although I have always loved pork and apple sasages, I never thought of putting apples in a sausage casserole! I'm planning on making one tonight actually, so I'm putting some apple into it now!
